Mozzarella Stuffed Homemade Meatballs & Spaghetti

I hosted a girls cooking demo night last Sunday! We had a blast. I showed them a few Italian recipes my family loves to eat and we ate (a lot), laughed, and learned! Here’s one of the recipes we created that turned out amazing. Save any leftover meatballs to put on subs later in the week for an easy leftover meal! Happy cooking!

Mozzarella Stuffed Homemade Meatballs

1 lb ground sirloin (90/10)
1 lb mild italian sausage
2 eggs
3/4 cup italian bread crumbs
sea salt and pepper
2 tablespoons fresh parsley, chopped
2 tablespoons fresh basil, chopped
3 garlic cloves, minced
1 ball fresh mozzarella cheese
1/4 cup olive oil

Makes about 30 meatballs

Directions: In a large mixing bowl put in ground sirloin and sausage. Put in 2 eggs, bread crumbs, salt and pepper, herbs, and garlic. Wash hands and then mix thoroughly with hands until well combined. Wash hands and chop bite size pieces off mozzarella ball (x30). Take a few tablespoons of meatball mixture and form about the bite sized piece of mozzarella. Keep forming and making meatballs (about 30). Warm olive oil in large skillet. Brown meatballs on med high, on each side until caramelized. Finish in crock pot or oven to cook through. Place into our Semi-Homemade Tomato Sauce.

Serve with spaghetti noodles, cooked per box instructions, top with grated parmesan.

Semi-Homemade Tomato Sauce

2 tablespoons extra virgin olive oil
2 cloves garlic, minced
1 medium red onion chopped
Salt and pepper
1 24oz jar three-cheese spaghetti sauce
1.5 tablespoon sugar
2 tablespoons fresh basil chiffonade
